  1. Preheat your oven to 325°F (160°C). Grease and flour a 9x5 inch loaf pan, or a 6-cup bundt pan.

  2. In a large mixing bowl, cream together the softened butter and granulated sugar with a whisk until light and fluffy (about 3-5 minutes).

  3. Add the eggs one at a time, beating well after each addition until fully incorporated. Stir in the vanilla extract.

  4. In a separate mixing bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed with the whisk until just combined. Do not overmix.

  6. Pour the batter evenly into the prepared pan.

  7. Bake for 60-70 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, you can loosely tent it with foil.

  8. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely. Slice and serve.
