Season the Chicken
Pat the chicken dry and season with salt, pepper, and paprika.

Sear the Chicken
In a large pot or Dutch oven, heat olive oil over medium heat. Add chicken thighs, skin-side down, and sear for 4–5 minutes per side until golden brown. Remove and set aside.

Sauté the Aromatics
In the same pot, add onion, garlic, and carrot. Cook for 3–4 minutes until softened

Add Rice & Spices
Stir in rice and thyme, toasting for 1–2 minutes for extra flavor.
